About Fiery Chipotle-Lime Glazed Shrimp Skewers
These Fiery Chipotle-Lime Glazed Shrimp Skewers are the ultimate recipe for a quick summer grill-out, combining bold flavor with incredibly fast cooking time. The key is the marinade, which balances the smoky heat of chipotle chili pepper and smoked paprika with the bright acidity of fresh lime juice and a hint of local honey for sweetness.
The shrimp are marinated briefly—just enough time to absorb the zest and spices—then grilled over medium heat for only minutes until perfectly tender. To ensure maximum flavor, a portion of the marinade is reserved and drizzled over the shrimp just as they come off the grill.
These skewers are incredibly versatile: serve them immediately hot off the grill as a stunning appetizer, place them over a fresh garden salad, or tuck them into warm tortillas for delicious shrimp tacos. They make any meal feel like a special occasion.
Serving Suggestion

Dietary Information: Lean Protein Powerhouse
These shrimp skewers are a fantastic source of lean protein, delivering a high amount of protein per serving while staying relatively low in total fat and carbohydrates. Shrimp are a great source of key micronutrients, including Selenium, which is important for thyroid health, and Vitamin B12, which supports nerve function and energy.
The use of extra virgin olive oil contributes monounsaturated fats (a healthy fat), and the honey provides natural sweetness and quick energy. Since shrimp can be naturally high in cholesterol, it is helpful that the recipe is otherwise very lean.
A quick note on sodium: The sodium content can vary widely depending on whether you use frozen pre-brined shrimp and how much salt you add to taste. If you are managing your sodium intake, use raw, unseasoned shrimp and be moderate with added salt.

Fiery Chipotle-Lime Glazed Shrimp Skewers
The ultimate recipe for a quick summer grill-out, combining bold flavor with incredibly fast cooking time.
Ingredients
The Marinade
- 1/4 cup extra virgin olive oil
- 1/4 cup fresh squeezed lime juice (approx. 2 limes)
- 1 Tbsp lime zest
- 1 tsp chipotle chili pepper
- 1/2 tsp smoked paprika
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 Tbsp honey (preferably local)
- Salt and black pepper, to taste
The Skewers
- 1-1/4 lbs. extra-large peeled deveined shrimp (16-20 count)
Instructions
- Prepare Skewers: If using wooden skewers, soak them in water for at least 30 minutes before adding shrimp to prevent burning. Metal skewers (12-15″) are preferred.
- Make Marinade: Whisk all marinade ingredients together in a small jar with a lid.
- Reserve Marinade: Pour one-half of the marinade mixture into a large non-reactive bowl and reserve the other half in the jar for serving.
- Marinate Shrimp: Add the shrimp to the bowl and toss to coat. Marinate for at least 15 minutes but not longer than 30 minutes. (If using frozen shrimp, thaw, rinse and pat dry first).
- Thread Shrimp: Thread the shrimp onto the skewers, aiming for 5–6 per skewer.
- Preheat Grill: Preheat your grill over medium-high heat, then reduce the heat to medium. Lightly oil the grill grate.
- Cook Shrimp: Cook the shrimp until they are no longer translucent, typically 3–4 minutes per side. Watch carefully as shrimp cook quickly and will become rubbery if overcooked.
- Serve: Remove skewers from the grill onto a platter. Drizzle lightly with the reserved marinade. Garnish with parsley or cilantro and lime slices.
